The Elegant Flan

One of the most well known desserts from Mexico is the flan. This sweet custard covered in caramel sauce is simple and elegant. It is loved by everyone, rich or poor; young or old. It comes with an interesting history that dates back to ancient Rome. Way back when, the Romans began to keep chickens on hand for eggs and meat. When they needed something new to do with all the eggs, they turned to Greece and developed a recipe for custard. The Romans made their custards savory instead of sweet.

After Rome fell, this custard became part of European culture during the Medieval age. Besides the savory varieties, people began experimenting with sweet custards. The Latin name for this dish was flado, which means custard. It became flaon in old French and from there it evolved into the name flan that we use today.

Eggs were considered to have healing benefits, so flan was served to aid the liver, kidneys, and chest as well as to increase fertility. Flan spread across Europe, satisfying hungry bellies everywhere. Spain developed a sweet version topped with a caramel sauce. The recipe was brought to the New World when the Spanish arrived in Mexico.

In Mexico, the flan was elevated to a new level. Mexican flans may be made in a special pan called a bain marie. This is a pan that has a spot for the flan as well as an attached outer pan for water. Using this pan, you can cook a flan either on top of the stove or in the oven. If you do not have a bain marie, you can use a dish made of porcelain, glass or any other material that will not cause the custard to stick. This dish can be set in a roasting pan with water inside and baked.

You can also use ramekins to make flan if you want to make smaller, individual servings. A large flan is still pretty impressive, though. They are not too difficult to make. Just be sure to follow all the directions carefully. With a few simple ingredients you can end up with an elegant dessert. What more could you wish for?

Vanilla is the traditional flavor of a Mexican flan. Only use fresh vanilla bean or the best of real extracts! You can find other flavors, however like pistachio, coconut, pumpkin, lemon, or almond. All flavors are topped with the delicious caramel sauce that is the true signature of a Mexican flan.

Just like several other authentic Mexican desserts, flans give a creamy coolness to the mouth after the heat of your entre. This soothing dessert is also perfect when someone is a bit under the weather. It is easy to digest and nourishing. It also tempts the appetite.

So, try making a flan at home. Go ahead, do not be afraid. This simple dessert can take some practice to truly master, but it is worth it to give your family and friends an elegant dessert. Serve it up on special occasions or just because it sounds good. You will be adding flan to your list of desserts that are tried and true.

If you are vegetarian, you can still enjoy some terrific Mexican food. You will find lots of recipes featuring tomatoes, beans, corn, squash, and other fresh produce. You can even top it off with a vegetarian dessert with authentic recipes from Mexico.

Setting the Stage for Cinco de Mayo Parties

Dessert is an important part of your menu planning. As you plan for your Cinco de Mayo party, spend as much care choosing your desserts as you do your appetizers and main dishes. Dessert will leave a lasting impression of your party in the minds of your guests, so do not skimp on the food or the ambience.

Choosing Desserts

Many desserts can be prepared well before your party begins. Mexican classics like Tres Leches cake needs that extra time to be at its best flavor before serving. Pick out a few desserts to make so everyone has a choice. Since Tres Leches is a creamy dessert, try one that is a bit spicy that combines chilies and chocolate. These two flavors complement each other well and make an incredible combination.

Spend the time to do the desserts right. Everyone loves a rich, decadent dessert. You may also want to choose something lighter for your guests who prefer not to indulge. A nice fruit sorbet or a flan topped with fresh fruit may be just the thing they crave.

Laying the Table

Now that you have selected your desserts, you need to present your food in the most attractive way possible. You know Mexico is well known for its bright colors. Do not bother with earth tones and pale pastels. Cover your table with a richly colored cloth. You can go with the colors of the Mexican flag if you wish, or choose a color that complements your tableware. You can always add the red, white, and green of the Mexican flag in other ways.

Do you have any tropical houseplants? If you do, borrow a leaf or two to let out on the table. Palm fronds or leaves from a tree philodendron look especially tropical and exotic. Lay a couple on top of the tablecloth and set your dishes on top of them so they peek out from below. Use colorful platters for your main dishes.

Instead of flowers, try making a centerpiece from peppers and tropical fruits accented with foliage. This looks great and sets off your food perfectly. For desserts, serve them on brightly colored dishes. Tres Leches is a pale cake, so serving it on a brightly colored dish sets it off perfectly. You can even accent it with some small, colorful, edible flowers or petals. The petals can be natural or candied. Bright colors will also make chocolate desserts look even richer.

The Overall Effect

Cinco de Mayo parties should be colorful affairs. The environment should be full of color as well as your table and your food. The presentation you make will have a major impact on the whole mood of your party. Try to make even the simplest dishes look rich and sumptuous.

Now that your setting is done, attend to yourself. Dress up. Be colorful and have fun. In the Mexican culture, it is expected that people will dress up for special occasions. Dressing up in something bright will take away your stress and make you feel good.

All that is left is for your guests to arrive. The food is ready. The mood is set. All you need to do is smile and welcome your guests.

Save Your Oven Space For Your Main Meal – Try Crockpot Dessert Recipes

When you’re planning your big holiday meal, do you often feel like you spend way too much time figuring out how you’re going to shuffle all your dishes in and out of the oven to make room to cook your desserts? My solution this year is to take my favorite desserts and transform them into crockpot dessert recipes. Using your crockpot to make desserts is a great way to free up valuable oven space so you can keep your main courses cooking instead of spending time rotating them in and out of the oven.

So, how am I going to turn my old favorite dessert recipes into crockpot dessert recipes? I chose three of my family’s favorite desserts to make this year in my crockpot in order to free up my oven space and stove top for other dishes. Let’s see how we can put my crockpot to work!

Apple Betty: You always want this dessert to come out of the oven just before you serve it because when you top this hot dessert with a dollop of ice cream or whipped cream it turns heavenly! You can use similar ingredients, but I add a touch more butter. You’ll cook it on LOW for about two hours, maybe a little less if the apples start to get mushy. Time it so you’re serving it right after it’s cooked and still nice and bubbly hot.

You can add a crunchy topping just before serving if you wish. Just mix the ingredients together in a small saucepan and heat until butter is incorporated. Sprinkle on your mixture either just before serving or after you scoop the apples into dessert bowls.

PB and Chocolate Brownies: Brownies are always yummy, but this brownie dessert tops them all with the added peanut butter! You begin with a regular brownie mix, but the dessert isn’t cut into squares like normal brownies. You spoon the dessert into bowls instead of cutting them into traditional brownie squares. Serve while hot so that the added ice cream or whipped topping melts a little. Very yummy!

You can garnish this dessert a bit more with a sprinkle of Reese’s Pieces or even some mini peanut butter cups. A few chocolate sprinkles is nice, too. Once again, you throw this all together to cook a few hours before you want to serve dessert and you don’t have to worry about shuffling pans in and out of the oven. And, your dessert will be ready to serve, still nice and warm.

Classic Pecan Cheesecake: If you have a favorite cheesecake recipe you might as well use it. I make a graham cracker crust with some finely chopped pecans added. The filling I use is pretty classic. The tricky part of this dessert is that you’ll have to make sure a 7″ springform pan will fit. Usually a 5 quart or 6 quart size will work, but make sure before you begin.

The pan needs to be supported off the bottom a little, so you will want to insert a small rack into the bottom. If you don’t have a rack you can devise a little “donut” out of some aluminum foil by just rolling up a bunch and forming a circle. Be sure when you put the pan in, that the pan does not sit directly on the bottom. This cheesecake is cooked on high for a couple hours. Then, the heat is turned off and left covered for about an hour more. Once you can handle the pan, you can lift it out and place it on a rack to cool completely. Remove the springform pan from the cheesecake and you’re done. Cheesecake is served either room temperature or cold so you can make this a day or so ahead if you’d like. Don’t forget to refrigerate any leftover cheesecake.

Rather than struggle another year shuffling food around all around the kitchen, leave your dinner cooking in peace and quiet, tucked safely away in the oven where it belongs. Because a holiday dinner is not complete without desserts, this simple plan to create new crockpot dessert recipes out of favorite old standards will help with all that last minute chaos. Why sacrifice any sweet treat because you lack room in the oven? Get out your crockpot and start re-creating your own favorite dessert recipes. Enjoy!
